Prepare the sautéed vegetables and add the lentils. Cook them in water and add more water as it evaporates. Meanwhile brown the bacon in a pan with a little oil on a low heat, so that it becomes crispy.
Put the water in a pot and a little vinegar with salt,make a swirl with water and add the egg by making it rotate with a wooden spoon till the cooking is completed.
Garnish with a little oil and with a big slice of crispy bread.
